High Protein Beet Brownies
There are so many beet brownie recipes out there and many are delicious, but I have not found one high in protein. This is why I have decided to make the kitchen my lab today. I played around with some ingredients to make my own high protein beet brownies.
3 Beets blended
1/2 cup of Coconut flour
1-2 cups of mixed berries
1/2 cup of Coconut Milk
3 Eggs
1 tsp of Baking Powder
1 tbsp of Vanilla extract
1 tsp of cinnamon
2 Quest chocolate milkshake Quest Protein Powder pack (no brand preference these were just the only ones that had mini packs vs having to buy a whole tub)
1/2 tsp of Salt
1/4 cup of melted Butter
1/2 cup of crumbled Walnuts
1/4 cup of water
Directions:
1) Wash, Peel and cut the beets
2) Boil Beets until soft. When soft, blend the beets
3) Preheat oven to 375 degrees
4) Grease pan with Butter or Span
5) In a big bowl mix eggs, coconut flour, Quest chocolate milkshake Quest protein powder, coconut milk, vanilla extract, cinnamon, salt, melted butter, baking powder, walnuts, water, blended beets
6) Mix until the consistency is similar to the above picture
7) Transfer to a baking dish

Servings: However many you want. I am not telling you what to do and hey, I don’t judge.
I am not gonna lie, these tasted less like a “normal brownie” than you might expect but that is expected when you experiment off the cuff and really don’t have a “recipe”. If you need the sweet fix, go for the real deal. If you want something with no added sugars, contains good fats, fiber, a blend of good-for-you-nutrients, a good amount of protein for health, all kinds of performance, and recovery, I think my option is pretty darn good!
