>Summer Chicken Pecan Salad

This is an oh-so-good high protein salad that you can enjoy at anytime that I tried from this months Alive. You may even want to try walnuts instead of pecans for the higher omega 3 and fibre content.

8 cups mixed greens or spinach
1 mango peeled and chopped
1 red pepper, chopped
2 scallions, chopped
8 cooked chicken breast halves, sliced
2 tbsp chicken or vegetable broth
1/2 cup lemon or lime juice (I have a minor obsession with lemons 🙂 they are good for detoxing ur liver too!)
1 tbsp REAL honey (not the HoneyBee stuff but the one that is hard and almost looks like one of those rock crystals)
2 cloves of garlic minced
1 tsp dijon mustard
3 tbsp extra virgin olive oil
sea salt (the real kind will be sort of grayish NOT white) and pepper to taste
1/4 cup chopped pecans

Combine greens/spinach,mango, red pepper, scallions and chicken in a bowl. Whisk together the lime/lemon juice, honey, garlic and mustard adding olive oil slowly. Sprinkle salt and pepper as desired. Pour over salad and toss well. Top with chopped pecans.

Serves 8.
1 serving = 253 calories, 28g protein, 11g fat, 11g carbohydrate-2g fibre
