Here is what you’ll need:
2 tsp organic butter or coconut oil
1/2 small red onion cut in slivers
2 cups of broccoli flowerettes
1/4 cup chopped parsley
2 tsp dried basil
4 med whole free-run omega 3 eggs
1/2 cup whole milk (the GOOD unpasteurised if you can get it or sub in unflavoured almond milk, not quite the same but it works)
1/4 cup of Bob’s Red Mill Gluten free flour
1tbsp dijon mustard
celtic sea salt and pepper
1/3 cup raw organic cheese of choice, shredded
Preheat oven to 350 degrees
Saute red onion and basil and stir to combine. Turn off heat.
Beat eggs in a bowl with milk, flour, dijon mustard, salt and pepper.
Place in small, greased casserole dish. Top with cheese. Bake for 15-18 mins.
Remove from oven cut and serve!
Serves 4 prep time 30 mins
If you are a protein type add 4 strips of turkey bacon or 1/2 cup salmon.
If you are a carb type reduce cheese to 2 tbsp shredded low fat parm or romano sprinkled on top.
