High Protein Beet Brownies

There are so many beet brownie recipes out there, many are delicious, but I have not found one high in protein. This is why I decided to make the kitchen my lab today. I am not a chef by any means but am pretty schooled in food and nutrition me thinks ­čśë soooo I played around and decided to try to make my own high protein beet brownies today.

3 small beets blended
1/2 cup – Coconut flour
mixed berries
1/2 cup – coconut Milk
3 Eggs
1 tsp – Baking Powder
1tbsp – Vanilla extract
1tsp – cinnamon
2 Quest chocolate Milkshake Quest Protein Powder pack (no brand preference these were just the only ones that had mini packs vs having to buy a whole tub)
1/2 tsp – Salt
1/4 cup – melted Butter
1/2 cup – crumbled Walnuts
1/4 cup of water
1) Wash, Peel and cut the beets
2) Boil Beets until soft. When soft blend the beets
3) Preheat oven to 375 degrees
4) Grease pan with Butter or Span
5) In a big bowl mix eggs, coconut flour, Quest chocolate Milk shake Quest Protein Powder, coconut milk, vanilla extract, cinnamon, salt, melted butter, baking powder, walnuts, water, blended beets
6) mix until consistency is similar to the above picture

8) bake for 45-50mins
Servings: however many you want…I am not telling you what to do and hey, I don’t judge ;-D
I am not gonna lie, these tasted less like a “normal brownie” than you might expect but that is expected when you play around and really don’t have a “recipe”. ┬áIf you need the sweet fix, go for the real deal but if you want something with no added sugars (I am not talking about natural sugars/carbs found in fruits and beets), made with health promoting fats, fiber, a blend of good-for-you-nutrients and a good amount of protein for health, all kinds of performance, and recovery, I think my option was pretty darn good!
